kluski3This is a side dish that is very popular in Poland when you serve any type of stew or beef rolladen with red cabbage or a classic beef bourguignon. It’s a perfect solution if you are bored with serving just mashed potatoes. They not only look cute but are tasty and very addictive.
This recipe was passed to me by my good friends who are actual Silesians.

Serving:  2 portions (this recipe will give you 20-22 dumplings)
Preparation:  30 minutes
Cooking : 2 minutes
Calories for 11 dumplings: 170

Ingredients:
4 medium size potatoes (russet), peeled and quartered
4-5 tablespoons of potato flour

Boil the peeled potatoes in salty water and drain them. Let them sit to cool down for couple of minutes and mash them with a potato masher, food mill, or potato ricer.

Mix it all together into one large ball, and put it in a bowl.  Mold it into the bowl so that you have a flat surface.  Take a knife and cut it into quarters, removing one of the quarters of potato.  Put the potato flower into the space left by the removed quarter, then put the potato quarter back into its place, and mix it all together. Because you are filling the space left when you removed the ¼ potatoes, that’s why the recipe ingredients call for 4 to 5 tablespoons of flour;  that’s why it’s not a precise measurement.

In the meantime, bring 6 cups of water to boil. When it starts boiling add 2 tablespoons of salt.

When the ingredients are well combined, start shaping little balls and make a little whole in the middle with your index finger. This will create a little “hiding place” for your sauce.

Transfer all the dumplings gently into the boiling water.  They will all sink, so stir them gently once with your spider strainer just to make sure they don’t stick to the bottom of your pot. Then wait for about 20 seconds until they all float to the surface, then cook them for about 1 minute to 1 m 30 seconds. They cook very fast and you have to be very careful not to overcook them or they will fall apart. Take them out with your strainer and serve immediately.
