shrimp with riceThis is part two of preparing a very quick dinner using shrimp. It really cannot get any simpler. You can obviously add more veggies and spices because this is just an idea to kick start your imagination to get you to play with flavors. And you know what’s great about this, is that you can make the sauce while the rice is boiling.

Preparation:  5 minutes
Cooking: 15 minutes
Calories for 1 serving: 280 per serving (without rice)

Ingredients:
6 oz of raw large shrimp (fresh or thawed)
2 cloves of garlic, minced
2 tablespoon of fresh garlic, minced
6 mushrooms, sliced
1 green bell pepper, diced
½ teaspoon of chili flakes
¼ cup of white wine
3 grains of cardamom
7 oz of coconut milk (half of a can)
14 oz of whole peeled tomatoes (half of a 28 oz can)
1 lime
2 stalks of lemon grass
½ teaspoon of salt
½ teaspoon of pepper
1 teaspoon of canola oil
4-5 leaves of fresh basil, chopped
1 cup of jasmine rice

ingredients
Boil a couple of cups of water for the rice.
In the meantime start with peeling the shrimp and removing the vein.
kolaz shrimpsHeat one teaspoon of olive oil in a skillet. Add the minced/chopped garlic and ginger to the pan as well as chili flakes and sear it for 1 minute. Add the shrimp and sear them for two minutes on each side. Add the white wine and sear it for one minute. Add the lemon grass, but first chop off the dry ends and smash the root with your knife so that it releases more flavor whole cooking. After the sauce is done, discard those stalks.
kolaz sauceTransfer the cooked shrimp to a plate and then add the sliced mushroom and green peppers. Sear for 2-3 more minutes. Squeeze the whole tomatoes in your hands and add them to the pan, along with the tomato sauce, and sear it for one minute. Add the coconut milk and sear it for another minute.

Add the shrimp back to the pan and mix it all together, and then cook it all for another minute. The sauce is now done.
When the rice is done, pour some sauce over it and sprinkle some chopped basil and lime juice.
